Why do we place processing after storing the data?
While I collect the data from different sources, I must also process it in the format that my system can store it.
Does this mean, we process it store it again to describe the data later?

It depends on tasks. If we have loads of loads of data, which needs to be gathered from limited sources, we might straightaway process it before storing it to our system to get a leap over the time tradeoff.
But, if we have let’s say loads of resources, but not much data to be collected, it would have been better to collect the data first.
There are different data models which are preffered for different tasks.
